Sweet & Fruity sharing platter

Ingredients Sweet & Fruity sharing platter (4 servings)

  • 8 Churros
  • 500 g fresh (seasonal) fruit, e.g. strawberries, blueberries, raspberries, (baby) pineapple, kiwi and/or pear

Sauces

  • 1 portion mango-lime coulis* 
  • 1 portion strawberry-raspberry coulis* 
  • 1 portion lemon & lime dip*

Double-dip

  • 50 g chopped nuts 
  • 25 g grated white chocolate 
  • 2 tbsp (lightly) toasted* coconut flakes

Preparation method

Quick mango-lime coulis - 4 servings

  • Finely puree 600 g canned mango in a food processor or with a hand blender. 
  • Scrub 2 limes clean, grate the green rind from the fruit and squeeze. Stir the lime zest into the lime coulis and season with the lime juice. Store the coulis in a clean jar in the fridge.

Strawberry-raspberry coulis - 4 portions

  • Boil 500 grams of chopped strawberries and/or raspberries with 75 grams of sugar and the juice of 1 lemon gently for 5 minutes, until the fruit is soft. 
  • Rub the strawberry-raspberry puree through a sieve and let the coulis cool. Store the coulis in a clean jar in the fridge.

Lemon & lime dip - 4 servings

  • Dilute 400g of lemon curd with the juice of 2 limes and 2-3 tablespoons of water. Store the dip in a clean jar in the fridge.
