Tortilla wraps with sweet potato fries
Sweet potato fries are presented with an added dash of fun in a crispy tortilla wrap bowl, with a topping of fresh lettuce, creamy guacamole
Ingredients Tortilla wraps with sweet potato fries (10 servings)
- 1.5 kg Aviko Sweet Potato Fries
- 10 flour tortillas (with a diameter of 20 cm)
- 1 red onion
- 200 g finely chopped iceberg lettuce
- 300 g guacamole
- 150 g grated cheddar cheese
- 10 ovenproof bowls (15 cm in diameter)
Method
15 minutes preparation + 8/10 minutes oven
- Preheat the oven to 180 ºC. Press the tortillas into the bowls. Bake the tortillas in the preheated oven for 8-10 minutes until golden brown and crispy.
- Cut the onion into thin rings.
- Prepare the sweet potato fries according to package directions.
- Fill the tortilla trays with the sweet potato fries and divide the iceberg lettuce and onion rings over them.
- Spoon a spoonful of guacamole on each and sprinkle with the cheese and (chili) pepper to taste.
Serving tip: Delicious with steak and fish dishes. Or use it as a basis for a vegetarian dish with chickpeas or egg.
Tip: Try vegetable tortillas, for example, there are colourful tortillas made of beet and carrot.
Storage tip: Store the tortilla cups in an airtight container and pop them in the oven before serving.
