A refined mix of veal, tuna tataki, and capers, balanced with a creamy sundried tomato mayo
Ingredients (4 servings):
• Aviko SuperCrunch 9,5 mm
• Tuna tataki
• Calf meat
• Capers large
• Cornichons
• Puffed paprika mayonnaise
• Chervil
Method
Preparation time: 5 minutes
• Prepare the fries according to the instructions on the packaging.
• Spoon the fries on a plate. Garnish with the calf meat and tuna tataki.
• Top with capers, cornichons and dabs of puffed paprika mayonnaise.
• Garnish with some chervil.
Tip: Sundried tomato mayonnaise is a good alternative for the puffed paprika mayonnaise.
