Greens & Whipped Ricotta Loaded Fries

No meat, but lots of vegetables! A creamy dollop of ricotta and Parmesan cheese complete this delicious vitamin boost.

Ingredients (4 servings):

  • 4x150 g Aviko Wavy Blends Garlic & Herbs
  • 1 tbsp pine nuts
  • 400 g green asparagus
  • 1 zucchini
  • 3 tbsp olive oil
  • 250 g snow peas
  • 250 g ricotta
  • 100g semi-dried tomatoes
  • 25 g parmesan cheese
  • 3 sprigs of basil

Method

Preparation time: 20 minutes

  • Prepare the Wavy fries according to the instructions on the packaging.
  • In a dry frying pan, toast the pine nuts until golden brown and shake them on a plate.
  • Trim the woody end of the asparagus and cut into 4cm pieces. Cut the zucchini into cubes.
  • Heat the olive oil in the frying pan. Fry the asparagus and snow peas for 4 minutes. Add the zucchini and fry the vegetables for another 2-3 minutes until al dente. Season with salt and pepper.
  • Beat the ricotta with the hand blender for 1 minute until creamy.
  • Spoon the Wavy fries onto 4 plates or a large platter. Divide the vegetables and tomatoes over it. Spoon a dollop of beaten ricotta on top.
  • Sprinkle with the cheese and the leaves of the basil sprigs.
