BBQ Pulled Chicken Loaded Fries

The oven does the work, while you whip up the BBQ sauce. The warm cheddar cream brings it all together.

Ingredients (4 servings):

  • 600 g Aviko Wavy Blends Paprika
  • 2 oranges
  • 1 tsp curry
  • 2 tsp dried oregano
  • 3 tbsp olive oil
  • 4 chicken legs
  • 1 small onion
  • 1/2 tbsp white wine vinegar
  • 2 tbsp dark caster sugar
  • 1 tsp smoked paprika powder
  • 200 ml tomato ketchup
  • 250 g cherry tomatoes
  • 1 red onion
  • 2 tbsp chives
  • 100 ml whipped cream
  • 75 g grated cheddar
  • 3 tbsp mayonnaise

Method

Preparation time: 50 minutes
Oven: 3 hours

  • Preheat the oven to 120 ºC. Scrub the oranges clean and grate off the orange peel. Squeeze the fruits. Mix orange juice and zest with the curry and oregano. Season with salt and pepper.
  • Place the chicken legs close together in the baking dish. Pour the orange mixture over it. Cover the dish tightly with aluminium foil. Close the dish with a second sheet of aluminium foil, so that no moisture can escape.
  • Bake the chicken legs covered with aluminium foil in the preheated oven for about 3 hours.
  • In the meantime, prepare the barbecue sauce. Coarsely grate the onion. Mix the onion with the wine vinegar, the caster sugar, the paprika (or a little more, to taste) and the ketchup.
  • Let the chicken cool, remove the skin and pull the meat into pieces from the bones with two forks (pulled chicken). In the baking dish, toss the meat into the baking juices.
  • Prepare the Wavy fries according to the instructions on the packaging. In a frying pan, heat the chicken with half of the barbecue sauce. Cut the tomatoes into quarters and the onion into half rings. Chop the chives.
  • In a saucepan, heat the cream. Add the cheese and let it melt in the warm cream until smooth.
  • Spoon the Wavy fries onto a platter or 4 plates. Divide the pulled chicken, tomatoes and red onion over it. Spoon the rest of the barbecue sauce over the top. Pour the cheese cream over the loaded fries. Sprinkle with the chives and serve with the mayonnaise.
