
Avocado, Beef & Kimchi Loaded Fries
Ingredients (4 servings):
- 4x150g Aviko Wavy Blends Garlic & Herbs
- 250 g mushrooms
- 1 nori sheet
- 300 g kimchi (chilled)
- 3 tbsp (Japanese) mayonnaise
- 1 tsp sesame oil
- 1-2 teaspoons lime juice
- 4 steaks
- 2 tbsp oil
- 1 avocado
- 2 tbsp fried onions
- 2 tsp furikake
- 2-3 sprigs of mint or coriander
Method
Preparation time: 30 minutes
• Clean the mushrooms and cut into quarters. Cut or slice the nori sheet into strips.
• Puree 1 tablespoon of kimchi with the mayonnaise with the hand blender. Add the sesame oil and season with the lime juice.
• Prepare the Wavy fries according to the instructions on the packaging.
• In a frying pan, heat the oil. Pat the steaks dry with paper towels and sprinkle with salt and pepper. Fry the steaks for 1-2 minutes per side until brown and on the inside until pink or as desired.
• Let the meat rest in aluminium foil for 5 minutes. Fry the mushrooms in the meantime for 5 minutes until brown and cooked. Cut the avocado into cubes.
• Cut the steak into slices. Spoon the Wavy fries onto a platter or 4 plates.
• Divide the steak with the mushrooms, the rest of the kimchi and the avocado over the fries.
• Sprinkle the Wavy fries with the nori strips, fried onions and furikake. Garnish with the leaves of the sprigs of herbs.
