Salmon burger with hummus, green asparagus tips, watercress and wasabi mayonnaise

Preparation:

For the hummus, rinse the chickpeas with cold water. Mix chickpeas, garlic, paprika powder, cumin, salt and olive oil in a food processor to obtain smooth mass. In the end add fresh coriander so that it is not crushed very finely. Season with pepper and salt. Place hummus into separate bowl. For the burgers, cut the salmon into chunks and place them in the food processor. Then add spring onions, grated lime peel and juice, chilli peppers, breadcrumbs and salt. Stir until the mixture is firm. Finally, add chives. Prepare the Aviko Pure & Rustic Fries as directed on the package. Heat the olive oil in a frying pan, shape the salmon mixture into 10 equally sized burgers and fry them on medium heat for about 3 minutes on one side. Meanwhile, roast the green asparagus tips in the pan. Turn the burgers over and fry for another 2 minutes until they become golden brown. Build the burgers as follows:

• brush the underside of the bun with the hummus

• cover with watercress

• place the hot salmon burger on the watercress

• spread the asparagus tips and onion rings on the burger

• add wasabi mayonnaise

• cover with the top of the bun and serve with Aviko Pure & Rustic Fries
