Prepare fries according to informations on the package. Drain them and mix in a bowl with parmesan cheese and chopped shallots. Season with chopped parsley and salt. Combine mayonnaise with thyme, chili, lemon zest, salt and pepper.
Lay off a portion of fries on paper sheet and lightly sprinkle with cayenne pepper and a pinch of chili flakes. Serve with remoulade in a small bowl.
