Deerburger with beef shoulder, mushrooms and gherkins


Boil the broth and keep it warm on low heat. Heat some butter in a large frying pan. Season the beef shoulder with pepper and salt. After removing butter foam, place the whole piece of meat in a pan. Roast the meat all around brown and then add the onion, garlic and bay leaf. Then pour the broth and wine over it and let the meat simmer for 2 to 3 hours on low heat. Keep adding liquid while simmering. Take the meat out of the pan, cut it into small pieces, place in the pan again and mix with the sauce. In a bowl mix the deer meat with thyme, rosemary, garlic, mustard, pepper and salt. Shape 10 burgers. Prepare the Aviko Pure & Rustic Fries as directed on the package. Heat up 1 tablespoon of olive oil and some butter in a frying pan and fry the burgers for 3 minutes each side until they are golden brown. Fry the mushrooms in the same pan and season them with pepper and salt. Build the burgers as follows:

• coat the underside of the bun with mustard mayonnaise

• top with some rocket and fried mushrooms

• put the hot hamburger on the rocket and mushrooms

• spread gherkins and the beef shoulder over it

• cover with the top of the bun and serve with Aviko Pure & Rustic Fries
