Cut bagels into halfs. Grill gently from both sides. Chop the peppers into larger pieces, onion into rings, courgette and mushrooms into slices. Fry vegetables until tender in a pan with a little of olive oil. Season with salt and pepper. Add chopped sun-dried tomatoes, chopped olives to ricotta cheese and mix. Add basil leaves and season to taste with salt, pepper and lemon zest. Prepare fries according to the instructions on the package, season with salt and chili and stir.
Brush bagels generously cheese mass. Place the peppers, arugula leaves and other vegetables at the bottom half. Cover with the other half of the bagel. The rest of cheese sauce serve in a separate bowl. Serve bagels along with sweet fries on a plate, garnish with arugula leaves.
Serve it hot or cold - both ways are perfect!
